B-21 began with a simple belief — that the most extraordinary meals are not invented, they are inherited. Across every continent, there are dishes carried for generations by the people who refused to let them be forgotten. Our work is to find them, honour them, and present them at the level they deserve.

Each chapter of the collection is chosen for its story, its heritage, and its ability to create something unforgettable. We translate street kitchens to the luxury table without losing what made them matter in the first place.

The kitchen is studied at its source. The ingredients are sourced for provenance. The presentation borrows the discipline of a Michelin pass. The hospitality borrows from the warmth of a family meal. None of it is borrowed without permission.
